Speakers Series (5:30-6:30): Nose to Tail Pork Butchery with Joseph Crocker, Chef and Owner of Peasant's Pantry
Joseph uses his culinary training and fine dining restaurant experience to create charcuterie and other specialty meats using 100% local pork, beef, lamb and poultry. He is a strong believer in “nose to tail” eating, getting the best use of the whole animal.
In this discussion and demo of nose to tail butchery, he will show how to break down a complete side of pork, explain the different cuts and suggest different cooking methods for each.
